Recipes - Chicken Casserole

This is a favorite recipe in our house.  This recipe is easy to make and great to take to others or potlucks.

Ingredients:
4 chicken breasts or 1 whole chicken (cooked and deboned)
2 cans cream of chicken soup
1 (16 ounce) sour cream
1 tube ritz crackers
1 stick of butter
Layer chicken in bottom of 13x9 casserole dish.  Mix cream of chicken soup and sour cream together, layer over chicken.  Crush crackers and layer over soup mixture. Melt butter and pour over the top of the crackers.  Place in 350 degree oven for 30 minutes.

Serve with rice and green beans. 

I made this last night with canned chicken and halfed the recipe.  This actually tasted good.  That made it a quick and easy meal in 30 minutes.  Another good way to make this quick is to have your chicken already cooked and deboned and put in the freezer, then all you have to do is defrost the chicken.  The longest part of this recipe is defrosting, cooking, and deboning chicken.  That is why I tried the canned chicken and am thinking of quicker ways to cook a meal.  Sometimes you just don't have time to defrost.
